Holiday Stuffing
Ingredients
1 HaleLife Bakery Sandwich Bread, thawed
1 cup Earth Balance Vegan Butter
3 cups diced sweet onion, roughly diced
2 cups diced celery
6 garlic clovers, minced
3 T. chopped fresh sage
3 T. chopped fresh parsley
3 T. chopped fresh rosemary
2 eggs or flaxseed egg recipe (see below)
2 1/2 cups vegetable stock
1 T. Salt & Pepper
Directions For Bread Cubes

Preheat oven to 350 degrees

Cut entire loaf of bread into 1 inch bread cubes
-
Place bread cubes in single layer on sheet pan and bake for 15 minutes until toasted and crispy. Bread cubes should be completely dry and without any moisture.
Directions For Stuffing
-
Preheat oven to 350 degrees
-
Brush a 9x13 baking dish with melted butter, olive oil or spray with nonstick spray
-
Heat the butter in a large skillet over medium heat.

Once melted, stir in the onion, celery and garlic with a big pinch of salt and pepper
-
Cook until the onions and celery soften, about 8 to 10 minutes.

Stir in the sage, parsley and rosemary. Cook for another minute.

Stir in 1 cup of vegetable stock.

Place the bread in a large mixing bowl, pour the onion celery mixture over the
bread crumbs and toss well to coat. -
In a small bowl or measuring cup, whisk together the remaining 1 ½ cups stock and the 1 tablespoon of flaxseed or the 2 eggs

Pour mixture into the bread cubes and stir and fold the bread cubes until thoroughly combined. Stir gently to avoid breaking apart bread completely.

Bake the stuffing for 45 to 50 minutes. Serve warm & enjoy!
Flaxseed Egg Recipe (for two eggs)

Combine 2 Tablespoons of ground flaxseed and 1/3 cup of water in a small mixing bowl.

Mix well to combine.

Let stand for five minutes to thicken before adding to recipe.
